The Day Has Come!

Today is my last official day of summer break, but I'm really excited to start this school year! I'm excited to meet new students, and loop with my seventh graders from last year. It's been so great keeping in touch with them over the summer on Edmodo, and knowing that I'll be able to come in knowing how they learn will have so many benefits!

The Back to School article came out today in the Beacon that I told you about earlier this week, here it is if you are interested! :)

I'm prepping food for the week today and getting last minute things organized. Tomorrow is going to very busy, but I'm bringing my gym bag, and I'm pledging right now that I will go to the gym after work tomorrow :)

Do you prep food ahead for the week?

On the list to pre-make today is:

Pasta Salad
Betty Crocker Suddenly Pasta Salad: Creamy Italian. 
This is my favorite, but it calls for mayo, so I substitute by slowly adding extra virgin olive oil to the seasoning until it's a nice consistency. 
The seasoning looks like a creamy mixture, and that's good enough for me. I have never been a fan of mayo, and I'm glad considering how much fat is in it!


Then I add mozzarella cubes to it for some calcium :)

and Bruschetta



I just slice fresh tomatoes, mix with mozzarella, olive oil, and italian spices, and refrigerate!



My typical lunch options are the following:


  1. Pasta Salad- Above!
  2. Bruschetta with French Bread Slices
  3. or...Stuffed Tomatoes with Mozzarella and Pampered Chef Italian Seasoning


 


         4. Salad-Horror. I buy bagged salad, because it's easy. I throw it in a ziploc, shake it up with some dressing, add some cheese and croutons, and eat it right out of the bag, lol.



         5. Cyber Wraps (from my college days...)

These include...

  • Tortilla
  • Baked popcorn chicken
  • Tomato
  • Ranch
  • Lettuce
  • Cheddar Cheese


Sometimes I'll switch it up and throw in a cup of Campbell's Creamy Tomato Parmesan Bisque, but I'm really trying to cut down on sodium!



I actually love the routine of school, because it prevents me from snacking throughout the day!

When I do snack, which is usually mid-morning. Here are my favorite snack items :)

Baby carrots with Ranch
Babybel White Cheddar (my Fav!!)

Jell-O fat free Rice Pudding

Kiwis, Strawberries, Bananas, and Grapes



Beverage of choice?

Fruit Water or Diet Coke, and of course, STARBUCKS!


Sparkling Fruit Water

  1. This post was the perfect timing for me. I was just introduced to your blog a few days ago (and am in love, by the way). I will be starting my first year of teaching TOMORROW and am trying to get good ideas for lunch because I get so bored so easily! Thanks for ideas! Salad out of the bag sounds perfect to just throw away afterwards and not worry about!

    1. Yay! I always have trouble finding food for school, and I agree, I do like that I can just throw it away when I'm done. Plus, you can shake it up and really mix in that dressing, which is great for me because I'm only allowed 2 exact tablespoons, lol. Thanks for finding me and commenting. Good luck tomorrow!!!! :)

Writing Notebook: Finishing up "Write Ideas" and first Invitation: AAAWWUBBIS!

Happy Monday!! Today I am continuing on with the Writer's Notebook! Last time I left off, students had just finished their "100 Things I Love". After that, students completed their writing territories, which I got from Nancie Atwell's book   Lessons That Change Writers.  We spent the first day discussing writing territories out loud, going through the list in detail, so that students had ideas of what to write about. I told them to think of it like the caption for a picture. One to two sentences that could become something more. Students had to complete this for homework. We also completely numbered our table of contents so that we could add in sections and start working in other parts of the notebook.  Students wrote their writing territories on these pages. Then we moved on to the Writer's Eye (I). Students had to place terms that described them within their "I" or around their "Eye". I created my o
